Etyek sits on a bed of Miocene limestone so soft that villagers once carved their cellars with hand picks, then stacked the excavated stone into the houses above them. The result is a village built twice: once at ground level, once beneath it. Around 200 press houses line the terraces known locally as the Öreghegy, or Old Hill, their whitewashed façades opening onto tunnels that hold a steady 12°C year-round. The region owes its modern shape to phylloxera and to Budapest's thirst. When the louse destroyed Hungarian vineyards in the 1880s, growers replanted Etyek's chalky slopes with grafted vines, and the capital — an hour away by cart, half that by car today — absorbed nearly everything the hillside produced. For most of the twentieth century Etyek was known chiefly as a base-wine district: its high-acid Chardonnay and Királyleányka travelled to Budafok to become sparkling wine under the Törley name. That anonymity ended slowly. Since the 1990s a generation of small estates has bottled under its own labels, and the etyek wine tasting tour has become the standard way visitors meet them. Geography explains the style. Etyek-Buda is Hungary's coolest wine district, sitting at 150 to 250 metres on a plateau exposed to northwesterly winds off the Vértes hills. Ripening arrives late; acidity survives. The whites are lean rather than tropical — Chardonnay, Sauvignon Blanc, Irsai Olivér, Zöld Veltelini — and the sparkling wines built from them retain a cutting freshness that warmer Hungarian regions cannot reproduce. Pinot Noir and Kékfrankos appear in smaller quantities, usually pale and taut. The cellar row itself is the district's architectural argument. Barrel-vaulted corridors run 20 to 40 metres into the hill, some connected to neighbours by side passages, their walls furred with the black cellar mould that winemakers read as a sign of correct humidity. Above ground, the press houses follow a single vernacular pattern: one gable, one door, one small window, repeated down the lane in a rhythm that photographs better than it describes. Filmmakers noticed. The Korda Studios complex opened nearby in 2007, and the vineyards now share their horizon with soundstages.
